We call this wine "Jeunesse", which is the French word for youth. We use carbonic fermentation to make this wine, which preserves its youthful character and is the traditional winemaking technique of Beaujolais.
With aromas and flavors of blackberries, violets and pepper with a touch of clove, it finishes with rich extracted black fruit flavors and a hint of chocolate. This is a substantial wine that needs to be served with rich, earthy food. Enjoy it with complex, multi-layered creations like braised short ribs or coq au vin.
